Good Food Guide: Xiao Sheng Xuan Japanese Ramen

Since travelling to Tokyo three years ago, I have fallen in love with ramen. There are many ramen restaurants in Macau, but the taste is a far cry from those in Japan. Recently I visited Xiao Sheng Xuan Ramen – a highly popular restaurant. They provide three flavors: original Tonkotsu, spicy Tonkotsu and limited edition.

Guests can choose the scale of hardness or softness of the noodles. As for meat, they can pick shoulder or pork belly. Shoulder meat has less fat and is chewier, while pork belly is more soft and tender.

My friend and I both ordered limited edition, which is squid ink seafood ramen and tomato Tonkotsu ramen respectively. Very soon, a bowl of steamy black color ramen was brought to our table.

The rich squid ink matched surprisingly well with the Tonkotsu soup base. It’s a must-try if you like slightly salty ramen with rich flavor.

The soup of the tomato one is bright red. It has two kinds of tomato sauce of a secret recipe and cheese. I suggest you add a spa-boiled egg with tender egg white wrapping around free-flowing egg yolk, which is like icing on the cake to have it with ramen.
